Holy Cow! Dean's 9!

So if you have read my Facebook posts, today my little Dean-O is 9 years old.  In preparation for his birthday, I asked him what kind of cake he wanted.  He, like me, is not a big sweets eater.  We can take them or leave them.  So usually on our birthdays we forego the cake.  Last year we had blue cupcakes, and I was anticipating something similar.  But to my surprise, he asked for cookies.  He said he wanted them to taste like a chocolate dipped strawberry, like the ones we get at Godiva.  (????)

So, I had recipes for every type of cookie known to man, but not these.  So to aide my search off to Pinterest I go.

While I was searching the voluminous postings in Pinterest, Abby Palmeter posted the photo below.  I thought ah ha!  Clicked on it, and viola!  I had my recipe.  (Link is embedded in photo)  


So the strawberry chocolate chip cookies are a success.  I have made a similar cookie using Devil's Food Cake Mix, but never in my wildest dreams would I have thought to use Strawberry.  But, I agree with Dean, they taste like a big chocolate dipped strawberry.  Not bad if I do say so myself.  

Mine didn't come out quite this pink, they are a little bit more brown, but still very good.  So thank you Pinterest, you saved my day!

Get Ready for the King

Tri-Cities Baptist Church

Jesus is about to step on the scene to start his ministry.  John the Baptist was preparing the way for Jesus.  He was dispelling the myth that "We're all OK."  Why would we need to be saved from our sin if we thought we were ok.  

In Mark 1:1-8 John is preaching to the Jews about their need for a Messiah.  He is telling us all of our need for Jesus.

So how for God prepare out hearts?  He softens them to His message through others actions.

God uses people to reach us.  He uses His Word to soften our hearts. 

Mark 1:1-8 NIV84  "The beginning of the gospel about Jesus Christ, the Son of God. It is written in Isaiah the prophet: “I will send my messenger ahead of you, who will prepare your way”–“a voice of one calling in the desert, ‘Prepare the way for the Lord,
make straight paths for him.’ ” And so John came, baptizing in the desert region and preaching a baptism of repentance for the forgiveness of sins. The whole Judean countryside and all the people of Jerusalem went out to him. Confessing their sins, they were baptized by him in the Jordan River. John wore clothing made of camel's hair, with a leather belt around his waist, and he ate locusts and wild honey. And this was his message: “After me will come one more powerful than I, the thongs of whose sandals I am not worthy to stoop down and untie. I baptize you with water, but he will baptize you with the Holy Spirit."

Why I Referee at Upward Sports


Let me tell you why I referee at Upward.  

  1. I love basketball.  
  2. I love children.
  3. I want to make a difference. 
  4. I want to be useful to God.  



Let me tell you what I do not referee for .... 
  1. The glory. 
  2. The praise. 
  3. The adulation. 
  4. The easy life.


How can God take a basketball (football, soccer ball, or cheerleading) and use it for His glory?  In Romans 8:28, the Bible says "And we know that in all things God works for the good of those who love him, who have been called according to his purpose."  Therefore if we believe the Bible then we can see that God would use whatever means necessary to bring glory to His name.  

Being a Referee or a Coach is an honor.  I get so excited to see their faces light up at the line up time.  While I am getting them in line, ready for their names to be called, they giggle, laugh, and generally behave like little kids.  





"And he said: "I tell you the truth, unless you change and become like little children, you will never enter the kingdom of heaven. Therefore, whoever humbles himself like this child is the greatest in the kingdom of heaven." -- Matthew 18:3-4

Once I have the kids lined up, we start the music.  We use this really cool song called the Zombie Mix.  As soon as it starts, the kids start getting pumped up.  The parents get on their feet, and cheer, and the whole crowd is cheering.  The cheerleaders are called first, they set up a tunnel for the ball players.  One by one I call their names.  They run out with their hands raised and are all hyped up.  They circle up and you will hear them chanting their team names, and getting psyched out.  Then we gather and pray.  

To see them kneel before God, and to bow their heads and ask God to bless their game, priceless.  

That is just the beginning.  As a referee I get to teach these kids about basketball.  About Jesus.  About what it means to be a good sport.  I love my job.  

It's just .... why can I not get others to help?  I am sure it is not because they do not love children.  Or Jesus.  Or even basketball.  I know that Saturdays are precious.  I know that you have worked all week.  I know you are tired.  But so am I.  

These children need you.  They need to learn about God.  They need to see it in action.  Jesus died for us and commanded that we die to ourselves.  

"But seek first his kingdom and his righteousness, and all these things will be given to you as well" -- Matthew 6:33

As a referee I AM seeking the kingdom, and adding to it's numbers.  Please join me.

Single, Never Married

I often get weird looks from people when they hear the phrase, "Single, Never Married" come out of my mouth.  I certainly never thought I would be 42 (almost 43) and never married, but here we are.  I, like most every other little girl in the world, had her ideal wedding in her head.  The groom would look just so and my dress would be white, etc..  As we get older though, the dream often fades with reality.  Most days I am completely unfazed by being single.  But then there are days where I am not.  

I got a Facebook message today from an old roommate who is in her mid-thirties and had never been married.  Of all my friends whom I had lived with throughout my twenties and thirties, she and I were the last two to never get married.  Almost as soon as I read her message that she was getting married in February I had to two competing thoughts running through my mind.  

First, I was ecstatic for her.  She has wanted to be married for a very long time.  She has been very faithful in trusting that it is all in God's timing and waited for her mate.  I am awed by her patience, and her perseverance.  Looking back, I can see how God lead her through her singleness and how He provided.  Throughout the years she has had several romantic interests, but for some reason or other they always went no where.  So congratulations my friend.  I am super excited about sharing this day with you! 

The second thought that ran through my head was, "What is wrong with me?  Why am I still single?"  I am truly content in my situation, but there are times when my inner "little girl" takes over and whines about where I am.  There are times where I think that God forgot me, and I am doomed to be single forever.  I have deleted and re-wrote this paragraph many, many times.  I am not sure how I actually feel at this point.  When I tell you that I am content being single, I truly am.  But there is a spot deep down inside, one that I often deny exists, that does not understand why I am single.  

So here is my "rant:"
  1. I'm not ugly.  (Seriously, I'm not!)
  2. I am a fun person! I love to laugh, cut up and goof off ... 
  3. I love God!
  4. I love my son, more than the air I breathe I love him! 
  5. I am independent, I am not needy ... 
  6. etc..... 
I could go on and on and on ... but I won't.  God's promises are true.  My being single allows me to focus on His calling, and on my son.  I am insistent that I will remain focused on Jesus as my bridegroom as I am certainly his bride.  Single, Never Married.  That's me. 

Some scriptures I cling to when the worry sets in ... 

"I want you to be free from anxieties. The unmarried man is anxious about the things of the Lord, how to please the Lord. But the married man is anxious about worldly things, how to please his wife, and his interests are divided. And the unmarried or betrothed woman is anxious about the things of the Lord, how to be holy in body and spirit. But the married woman is anxious about worldly things, how to please her husband. I say this for your own benefit, not to lay any restraint upon you, but to promote good order and to secure your undivided devotion to the Lord." -- 1 Corinthians 7:32-35

Second Amendment

A well regulated militia, being necessary to the security of a free state, the right of the people to keep and bear arms, shall not be infringed. -- United States Constitution, Second Amendment  

According to the free dictionary infringed means to transgress or exceed the limits of; violate.  In this vein of thought, if this right "shall not be infringed" why do people think it is ok to ban guns?  

I have seen these photos on Facebook and other social media sites  ...








So what is the truth about the Second Amendment.  What did our forefathers mean when they said the right to keep and bear arms shall not be infringed upon?  This video does a pretty good job of answering this question.  Please take a moment and watch.  

There are no good answers to the problem of violence in our society, and against our children, but disarming the populace is not the answer!

To the People of the State of New York:
AFTER an unequivocal experience of the inefficiency of the subsisting federal government, you are called upon to deliberate on a new Constitution for the United States of America. The subject speaks its own importance; comprehending in its consequences nothing less than the existence of the UNION, the safety and welfare of the parts of which it is composed, the fate of an empire in many respects the most interesting in the world. It has been frequently remarked that it seems to have been reserved to the people of this country, by their conduct and example, to decide the important question, whether societies of men are really capable or not of establishing good government from reflection and choice, or whether they are forever destined to depend for their political constitutions on accident and force. If there be any truth in the remark, the crisis at which we are arrived may with propriety be regarded as the era in which that decision is to be made; and a wrong election of the part we shall act may, in this view, deserve to be considered as the general misfortune of mankind.
This idea will add the inducements of philanthropy to those of patriotism, to heighten the solicitude which all considerate and good men must feel for the event. Happy will it be if our choice should be directed by a judicious estimate of our true interests, unperplexed and unbiased by considerations not connected with the public good. But this is a thing more ardently to be wished than seriously to be expected. The plan offered to our deliberations affects too many particular interests, innovates upon too many local institutions, not to involve in its discussion a variety of objects foreign to its merits, and of views, passions and prejudices little favorable to the discovery of truth.
Among the most formidable of the obstacles which the new Constitution will have to encounter may readily be distinguished the obvious interest of a certain class of men in every State to resist all changes which may hazard a diminution of the power, emolument, and consequence of the offices they hold under the State establishments; and the perverted ambition of another class of men, who will either hope to aggrandize themselves by the confusions of their country, or will flatter themselves with fairer prospects of elevation from the subdivision of the empire into several partial confederacies than from its union under one government.
It is not, however, my design to dwell upon observations of this nature. I am well aware that it would be disingenuous to resolve indiscriminately the opposition of any set of men (merely because their situations might subject them to suspicion) into interested or ambitious views. Candor will oblige us to admit that even such men may be actuated by upright intentions; and it cannot be doubted that much of the opposition which has made its appearance, or may hereafter make its appearance, will spring from sources, blameless at least, if not respectable--the honest errors of minds led astray by preconceived jealousies and fears. So numerous indeed and so powerful are the causes which serve to give a false bias to the judgment, that we, upon many occasions, see wise and good men on the wrong as well as on the right side of questions of the first magnitude to society. This circumstance, if duly attended to, would furnish a lesson of moderation to those who are ever so much persuaded of their being in the right in any controversy. And a further reason for caution, in this respect, might be drawn from the reflection that we are not always sure that those who advocate the truth are influenced by purer principles than their antagonists. Ambition, avarice, personal animosity, party opposition, and many other motives not more laudable than these, are apt to operate as well upon those who support as those who oppose the right side of a question. Were there not even these inducements to moderation, nothing could be more ill-judged than that intolerant spirit which has, at all times, characterized political parties. For in politics, as in religion, it is equally absurd to aim at making proselytes by fire and sword. Heresies in either can rarely be cured by persecution.
And yet, however just these sentiments will be allowed to be, we have already sufficient indications that it will happen in this as in all former cases of great national discussion. A torrent of angry and malignant passions will be let loose. To judge from the conduct of the opposite parties, we shall be led to conclude that they will mutually hope to evince the justness of their opinions, and to increase the number of their converts by the loudness of their declamations and the bitterness of their invectives. An enlightened zeal for the energy and efficiency of government will be stigmatized as the offspring of a temper fond of despotic power and hostile to the principles of liberty. An over-scrupulous jealousy of danger to the rights of the people, which is more commonly the fault of the head than of the heart, will be represented as mere pretense and artifice, the stale bait for popularity at the expense of the public good. It will be forgotten, on the one hand, that jealousy is the usual concomitant of love, and that the noble enthusiasm of liberty is apt to be infected with a spirit of narrow and illiberal distrust. On the other hand, it will be equally forgotten that the vigor of government is essential to the security of liberty; that, in the contemplation of a sound and well-informed judgment, their interest can never be separated; and that a dangerous ambition more often lurks behind the specious mask of zeal for the rights of the people than under the forbidden appearance of zeal for the firmness and efficiency of government. History will teach us that the former has been found a much more certain road to the introduction of despotism than the latter, and that of those men who have overturned the liberties of republics, the greatest number have begun their career by paying an obsequious court to the people; commencing demagogues, and ending tyrants.
In the course of the preceding observations, I have had an eye, my fellow-citizens, to putting you upon your guard against all attempts, from whatever quarter, to influence your decision in a matter of the utmost moment to your welfare, by any impressions other than those which may result from the evidence of truth. You will, no doubt, at the same time, have collected from the general scope of them, that they proceed from a source not unfriendly to the new Constitution. Yes, my countrymen, I own to you that, after having given it an attentive consideration, I am clearly of opinion it is your interest to adopt it. I am convinced that this is the safest course for your liberty, your dignity, and your happiness. I affect not reserves which I do not feel. I will not amuse you with an appearance of deliberation when I have decided. I frankly acknowledge to you my convictions, and I will freely lay before you the reasons on which they are founded. The consciousness of good intentions disdains ambiguity. I shall not, however, multiply professions on this head. My motives must remain in the depository of my own breast. My arguments will be open to all, and may be judged of by all. They shall at least be offered in a spirit which will not disgrace the cause of truth.
I propose, in a series of papers, to discuss the following interesting particulars:
THE UTILITY OF THE UNION TO YOUR POLITICAL PROSPERITY THE INSUFFICIENCY OF THE PRESENT CONFEDERATION TO PRESERVE THAT UNION THE NECESSITY OF A GOVERNMENT AT LEAST EQUALLY ENERGETIC WITH THE ONE PROPOSED, TO THE ATTAINMENT OF THIS OBJECT THE CONFORMITY OF THE PROPOSED CONSTITUTION TO THE TRUE PRINCIPLES OF REPUBLICAN GOVERNMENT ITS ANALOGY TO YOUR OWN STATE CONSTITUTION and lastly, THE ADDITIONAL SECURITY WHICH ITS ADOPTION WILL AFFORD TO THE PRESERVATION OF THAT SPECIES OF GOVERNMENT, TO LIBERTY, AND TO PROPERTY.
In the progress of this discussion I shall endeavor to give a satisfactory answer to all the objections which shall have made their appearance, that may seem to have any claim to your attention.
It may perhaps be thought superfluous to offer arguments to prove the utility of the UNION, a point, no doubt, deeply engraved on the hearts of the great body of the people in every State, and one, which it may be imagined, has no adversaries. But the fact is, that we already hear it whispered in the private circles of those who oppose the new Constitution, that the thirteen States are of too great extent for any general system, and that we must of necessity resort to separate confederacies of distinct portions of the whole. [1] This doctrine will, in all probability, be gradually propagated, till it has votaries enough to countenance an open avowal of it. For nothing can be more evident, to those who are able to take an enlarged view of the subject, than the alternative of an adoption of the new Constitution or a dismemberment of the Union. It will therefore be of use to begin by examining the advantages of that Union, the certain evils, and the probable dangers, to which every State will be exposed from its dissolution. This shall accordingly constitute the subject of my next address.

Gourmet Burgers

Ok, so I promised when I made them again, I would take pictures and post.  So here they are... Woot! Woot!


Gourmet ______ Burgers 

The reason the blank is there is that you can add whatever you wish.  The last ones that I made were Gourmet Bacon Cheddar Burgers, the one pictured above was Gourmet Bacon Burgers ... LOL 

I added cheese to the top of mine, Dean did not want cheese (go figure!) so I did not add.  





In your very own pretty pinkish bowl, add 1/2 of an onion minced,  cut up about 3 strips of bacon, 1 teaspoon of minced garlic, one egg, 2 bread slices - crumbled, 1 teaspoon of steak seasoning (see photo above - you can use whatever you have on hand), 1 teaspoon instant gourmet seasoning (see photo above - I purchased at the Fresh Market), salt and pepper to taste (not a lot since the seasonings have some).  

I work the mixture together with 1/2 a pound or more of 80/20 ground beef and make sure it still has a "wet" texture.  I then shape into patties.  



I like the patties shaped kind of rough, but you can make perfect should you desire.  I cooked on the stove top, but you could easily do these in your George Foreman grill.  I serve on heated hamburger buns and then top with whatever I want.  I served with my AWESOME baked beans and mac 'n cheese.  I may write up the baked beans recipe next, so stay tuned!

Proverbs 31 Mom

Sigh

I am so very, very tired.  Have I mentioned that I hate being sick?  Well I do.  Going to bed by 7:45 p.m. and 8:30 p.m. every night for two weeks has not helped, and when I wake up feeling worse than I did when I went to bed, well, that stinks.  

This morning was a struggle on my Proverbs 31 goal, I did not want to wake up nor was I in a good mood.  So, of course, I take it out on the cat and Dean.  Sigh.  What a set back.  

I would appreciate prayers, and encouragement because this Proverbs 31 thing is a lot harder than I thought it would be.

 I love these girls!  Their sense of humor crack me up!  





WAHOO!

I have two followers on my blog!  My good friend from high school, Andy Miller and my sweet cousin, Mary Lou Hawk!  Thanks guys! 

So, Andy wanted me to write about him.  So I will tell y'all this ... 

Andy is a peach.  An honest to goodness peach!  I was a junior in high school, dateless and it was prom season.  I did not want to sit at home without anyone to go with so I had a dilemma -- who to ask?  Because I had to ask, no one was going to ask me.  Andy was the brother of Pam  and I had known him since 8th grade, so I thought why not?  I asked him to go with me.  Not only did he say yes, but he made that night fun.  The cool thing about Andy is, it does not matter how long we go without talking, we just pick right up where we left off.  I truly appreciate that about him.  

I look back at my silly prom pictures and laugh, because I remember we had so much fun that night, and it was not awkward.  

So there Andy!  In case you needed a bigger head, you rock! 


End of an era ...



While perusing the Johnson City Press online I saw an article stating that Dr. Joe Corso had passed.   You can find the article here

As a young woman going to East Tennessee State University, with big dreams and wide eyes, I remember sitting in Dr. Corso's class on Appalachian Politics.  I remember thinking, I am from the Appalachian region, why do I need a class on the politics of this region.  I was prepared for absolute boredom.  However, to my surprise, his class was fun and interesting.  I gained a unique insight into the political structure of this region.  I still utilize my knowledge from that class when analyzing elections, etc..  

Rest in peace Dr. Corso.  You will be missed.  

Ugh! I hate being sick ...



I so totally hate being sick.  I feel like the worst mother.  Poor Dean takes the brunt of my bad attitude and it just makes me feel worse.  

This year, I did not make any resolutions per se but I did make a pledge to Dean to be a Proverbs 31 type of mother.  So sick or not, I made myself get up and take care of Dean.  

He got a fantabulous breakfast, bacon, egg & cheese omelet with fresh bananas and buttered toast with milk to drink.  Pretty sweet if I do say so myself! I felt accomplished and grown up doing the kind of things that my mother and grandmother did when they did not feel well, putting others first.  

"She gets up while it is still dark; she provides food for her family and portions for her servant girls. " Proverbs 31:15  

That was me!  I felt like a total rock star .. 


My goal this year is to be more of a Proverbs 31 type of woman.  A woman of character and integrity.  I know that Proverbs 31 directs women to be good wives.  I am not a wife of any man.  But I am trying to teach my son what kind of woman he needs to be on the look out for.  So therefore, my project.  

Please pray for me as I undertake this challenge, because to me this will be a challenge.  

"The fear of the Lord is the beginning of wisdom, and knowledge of the Holy One is understanding."  Proverbs 9:10

"Esteem her, and she will exalt you; embrace her, and she will honor you."  Proverbs 4:8

Dinner Last Night

As I mentioned, I love to cook.  But over the last few years, I have not had a lot of time to pursue this.  I have been in paralegal school, working crazy job hours, and tagging along to my son's many sports endeavors.  But this past month, my mother became ill and I needed to start cooking dinner more often for her and my father.  So I started in gung ho!  But whoa -- it is so true ... if you do not use your skills, they suffer.  (Seriously!)


Last night though, I was craving a nice, juicy hamburger.  You know, the ones you can get from dives.  Places like the Sit 'N Bull in Gray or The Cottage in Johnson City.  Yummy burgers.  So I set out to make my own.  



I took the 80/20 ground beef, mixed in an egg, 2 slices of bread crumbled up (by hand), one teaspoon of minced garlic, 2 teaspoons of dried minced onions, some awesome spice that I got at Earthfare ( I cannot remember the name of it), some Chicago Steak Seasoning and salt and pepper.  I mixed, by hand, this up and then added 3 stripes of bacon (chopped finely) and 1 cup of shredded cheddar.  Mixing again by hand (IMPORTANT: Do not over mix!  You want your hamburger to still be moist!) Then place in the pan and cook.  While it was cooking, I placed my buns in the oven (in foil) to steam.  I made homemade mac and cheese (velveeta and pasta - easy peasy).  



Dean does not usually like cheese on his burgers, and will not eat a lot of milk or milk based products.  So I struggle with getting him to get his needed calcium intake.  So that is why these burgers with the cheese inside them are so ingenious.  He is getting his calcium without his knowledge!  Sweet! 



Dean ate three (yes you read right) burgers and a small bowlful of mac and cheese.  He turned to me, with his stomach sticking out, and said "Mom, you're the best cook EVER!!!"  That made my night! 



These burgers are similar to the ones you can get in Food City meat department.  BUT mine were a lot cheaper.  Win for me.  And I have to agree with Dean, they were pretty darn tasty!

Wow, I have a blog, who knew?  


I am a single mother, who is trying to figure out how to juggle life and motherhood without compromising my principles.  I am a Christian, a Republican, and many  many many more things.  I am not shy nor am I ashamed of my beliefs and will probably say things that others disagree with.  But hey, that is ok.  We all do not have to agree on everything.  



My greatest love is my soon to be 9 year old Dean.  He is my light,  my life, my joy, my raison d'être.  How do you describe someone who, just by their very existence, altered your life so drastically.  I am sure other mothers feel the same about their children.  But I am still very much in love with my son.
